1½ lb boneless, skinless chicken breasts, halved lengthwise
3 Tbsp olive oil
2 cloves garlic, minced
½ tsp kosher salt
½ tsp pepper
1 (15.5-oz) jar marinara sauce
1 (8-oz) ball fresh mozzarella cheese, cut into 6 slices
½ cup thinly sliced mushrooms
2 sweet mini peppers, thinly sliced into rings
2 Tbsp sliced black olives
Preheat oven to 425°F. Toss together chicken, oil, garlic, salt, and pepper. Arrange on a large rimmed baking sheet.
Bake 15 minutes. Spoon marinara sauce over chicken; top with cheese, mushrooms, bell pepper, and olives.
Bake 5 to 10 minutes longer or until cheese is melted and chicken is done.
